Creamy, refreshing and with no refined sugar, these homemade salted date peanut butter lollies make a great frozen treat or dessert for summer. Plus, with only three ingredients they are super simple to make and much healthier than bought ice lollies and ice creams. They're also vegan!
Ingredients:
- 1 x 400ml tin full-fat coconut milk
- 1 tbsp maple syrup
- 1 heaped tbsp salted date peanut butter
- 75g frozen mixed berries (optional)
- In a jug, whisk the coconut milk with the maple syrup. Set aside for 10 minutes.
- Pour 150ml of the liquid into a separate jug and whisk through the salted date peanut butter. Lightly crush the frozen mixed berries with the back of a spoon and then divide between 6 ice-lolly moulds.
- Divide the peanut butter mixture between the moulds. Top with the remaining coconut milk mixture and add lolly sticks or holders. Freeze for 3-4 hours, or until completely frozen.
