Easy Spicy Peanut Noodles
Serves 4
Noodles tossed with a spicy, sweet, and salty peanut sauce, red peppers, spring onions and fresh mint. Best for those nights when you’re craving extra saucy, slightly spicy peanut noodles, but don’t want to leave your house…
Ingredients:
- Dried udon noodles, 500g
- Smoky Harissa Peanut Butter, 3 tbsp
- Soy sauce, 3 tbsp
- Garlic finely chopped, 2 tbsp
- Toasted sesame oil, 2 tbsp
- Stock or water, 3-4 tbsp
- Salt & Pepper to taste
To finish:
Finely sliced spring onion greens, fresh mint, red sweet peppers and crushed peanuts.
Method:
- Cook the noodles based on the instructions on the pack. Drain well and rinse on cold water.
- In a bowl, use a spoon to mash the peanut butter with the soy sauce until evenly mixed. Stir in the sesame oil and the chopped garlic, with enough stock or water to give the sauce the consistency of single cream.
- In a large pan, heat the peanutty sauce, add the noodles to the sauce and drench them well and season with salt and pepper.
- Spoon the cooked noodles into your bowls, then finish with the chopped spring onion greens, fresh mint, red sweet peppers and crushed peanuts if you like. Enjoy!
