No Bake Peanut Butter Caramel Brownies

Ingredients:
For the brownie layer:
- 2 ½ cups almond flour
- 1 cup salted date peanut butter
- ½ cup cocoa powder
- ½ cup maple syrup
- 2 tsp vanilla extract
For the caramel layer:
- 1 cup salted date peanut butter
- ½ cup maple syrup
- ⅓ cup melted coconut oil
- 1 tsp vanilla extract
- ¾ cup chopped peanuts (roasted and salted)
For the chocolate layer:
- 1 ½ cups chocolate chips
- 1 tbsp coconut oil
Instructions:
- First, add all of the brownie ingredients to a large bowl. Mix together until the ingredients are combined.
- Then, line a 20x20 inch baking dish with parchment paper. Firmly press the brownie dough against the bottom of the pan.
- Time for the best layer: easy vegan caramel! Add all of the caramel layer ingredients to a bowl. Mix together until the ingredients are evenly combined and the mixture starts to thicken.
- Transfer the vegan caramel to the baking dish. Spread it across the baking dish in an even layer and firmly press it against the brownie layer. Then place in the freezer for 15-20 minutes to set the caramel.
- Lastly, combine the chocolate chips and coconut oil in a bowl. Microwave in 30-second intervals, stirring occasionally until well combined. This should take about 1 minute.
- Pour melted chocolate over the caramel layer and store in the fridge to set for 2-4 hours.
- Slice the brownies into squares or bars. Sprinkle with roasted peanuts on top, if desired. Enjoy!
